  4. 1 cup mashed sweet potato
  5. 2 tsp baking soda
  6. 4 packs Stevia sweetner
  7. Frosting
  8. 2 tbsp peanut butter
  9. ¼ low-fat cream cheese
  10. 1 tsp vanilla extract
Instructions
  1. Blend ingredients and pour into non-stick muffin tins. Bake at 175°C for about 25 to 30 minutes or until lightly brown on top.
  2. For the frosting blend ingredients with hand mixer or beater and spread on top of cupcake when cool.

Method

Blend ingredients and pour into non-stick muffin tins. Bake at 175°C for about 25 to 30 minutes or until lightly brown on top.

 

For the frosting blend ingredients with hand mixer or beater and spread on top of cupcake when cool.
